Storing Sauces Right: A Commercial Kitchen Guide

Good sauce stock can still go to waste in a careless kitchen. Between delivery and plate, storage discipline decides whether the last serving tastes like the first. A practical guide for commercial kitchens.
1. First in, first out — actually
FIFO is printed on every storeroom wall and ignored in half of them. New stock goes behind or below existing stock. Date-check on delivery, and mark opened packs.
2. Respect the label
Storage instructions, best-before dates and post-opening guidance exist on the pack for a reason — follow them, and brief the team on what they mean for that specific product.
3. Decant with discipline
- Decant into clean, dry, food-grade dispensers — never back into the original pack.
- Use dedicated funnels and utensils per product family.
- Cap dispensers at close; open nozzles collect everything in the air.
4. Location matters
Cool, dry, away from direct heat and sunlight. Keep packs off the floor and away from strong-smelling goods — packaging breathes more than people think.
5. Watch consumption rhythm
Storage problems show up as consumption problems: sudden spikes (spoilage, leaks) or silent shortfalls (evaporation, pilferage). Weekly stock checks catch both.
