Scaling a Home Recipe to Industrial Batches

Royal Savera Foods began as Sanjeevani Products — a home kitchen in Gorakhpur, 2002. Scaling those recipes to industrial batches taught us lessons that no manual covers. If you are a food business wondering how a recipe survives that journey, here is what we learned.
What changes: everything measurable
- Quantities become specifications. "A pinch" becomes grams per batch, measured, recorded and repeated.
- Time becomes process. Cooking steps become stages with checks — intake, preparation, processing, packing.
- Memory becomes documentation. A recipe that lives in one person's hands cannot feed thousands; written standards can.
What must never change: the standard
When we moved from home kitchen to the industrial unit at GIDA, Sahjanwa, the recipes were scaled — but the rule was not negotiable: the batch must taste like the batch before it. That rule had won us our first customers in 2002; it would win the next thousand.
The quiet secret: procurement
The biggest industrial-era lesson was that consistency is decided before cooking begins — in how regularly fresh produce is sourced. A home kitchen buys for today; a factory must buy for the standard, every day.
We grow by meeting demand with quality, not by pushing products.
Twenty-plus years on, the scale is different. The standard is not.
